Amperage - Photographing the panels in the house and garage to calculate our amperage load. My suspicions were confirmed by an electrician that we are overdrawing our current 100A line (thanks to the hot tub, air conditioner, electrical stove and dryer).

Although I feel like you could just not run the hot tub, air conditioner, electrical stove and dryer all at the same time, and you should be fine. /s -

I should turn on all the 40A appliances at once and see which breaker goes first. It will be a game. And add in an element of 'whack a mole' and have someone at the breaker panel flipping the breakers back as they go. It'll be fun for the whole house!
